I call it "Mexican Pizza." Very quick.

Brown ground beef in skillet, drain fat, add envelope of taco mix and whatever water they suggest, simmer until not soupy (usually about 5 minutes).

Heat soft taco shells (we like whole grain or some kind of upgrade - like tomato basil or whatever) on both sides in a non-stick skillet with a little Pam sprayed. Doesn't take long - maybe 30-60 seconds per side.

Put taco shells on a foil covered cookie sheet, spread with taco meat, add chopped green onions, green and/or red/yellow chopped peppers, chopped tomatoes (have used drained canned tomatoes when desperate) and top with grated cheese - stick in oven for 5-10 minutes at 350-375 until cheese melts and serve. Could add other veggies if desired also.

You kind of need to eat it with a fork if you are not eating alone - kind of messy, but good. Can also cut it in fourths and attempt to pick up and eat like pizza.
