I believe that La Hacienda Catering remains the
only company allowed to offer what I call full-service catering. That is, company employees set up, serve and tear down.
Other outfits (Toojay's, redsuace, etc) are allowed to bring stuff to your venue, but it is your responsibility to serve, and to clean up afterwards.
The difference financially can be fairly substantial, but so can your group's expenditure of personal effort! Weigh the capabilities of your members against your group's treasury - do so carefully!
