I assume you want a destination rather than a road trip?
If you fly into Toronto, Ontario, Canada, you'll find it cooler and tons to do.
If you want less City, there are many fun resorts north of Toronto.
Niagara Falls is a popular tourist destination.

If you want a road trip, a previous poster suggested starting in New England and driving into Canada.
That works if you don't mind a lot of driving. My favorite thing is do is Whale Watching.

I was born and raised in the Canadian Maritimes, so that is heaven to me.
Temperatures there are usually about 20 degrees cooler than Florida.
Prince Edward Island is my favorite.
Also beautiful and picturesque are Nova Scotia, Cape Breton Cabot Trail, and New Brunswick.
If you ever seriously contemplate a vacation, I'd be happy to make some suggestions based on your wish list.
