Liquid Nitrogen cooking is part of the blossoming field of Molecular gastronomy. Do a Goggle search and find numerous articles on the subject. Sounds very techy and not something that will find its way out of the big cities due to the cost. I know that some restaurants that specialize in this start at $100 per entree.
