I know one can sign up for an International Plan with rates that can be scarry...my interest is not for being able to call home....that's why we are going away!!!!
But more for security. Without any special plan that cost too much, it sounds to me like ...leave it in the car.
Any experience/comments/suggestions?

Not sure where you're going but I'd check with your carrier. Some Carib ports I've received non-roam signals for Sprint. Others I'ver been zapped for 2nd mortgage loans to cover.

We sailed on Carnival Magic from NY to San Juan, St Thomas, and Tortolla. Our carrier is VERIZON. On board our cell phone used the ship's carrier's satelite service at $2.50 per minute. While in port in San Juan, we picked up VERIZON's extended network. Other ports were roaming charges of up to $1.29 per minute. One nite while we were at sea coming home, we called our good friends back in NY just for a chat and the 10 minute call was $25. But we knew that going in and it was fun bragging about our great trip.
Check with your carrier's air coverage, but take the phone anyway. And, when you're at sea, turn on your phone and see if you can pick up any service. Granted you won't use it like at home, but at least it would work in an emergency. Another neat thing is, if there are two of you and while at sea one can't find the other, you can call each other on board, of course for $2.50 per minute each for a total of $5 per minute.

Buy an international phone card and you can call from any phone at any port you stop in. We did this when we when on our European cruise this past July. Worked great.
