It seems that most places now cook pizza on a pan placed into the oven. Does anyone know of a place in TV that cooks pizza the old fashion way...placing the pie directly on the oven floor vs in a pan?

I know the pizza at Mallory Country Club is cooked in a wood fired oven. I'm not sure if it is cooked without a pan. I'd call them and ask!

Cane Carden is also wood fired....don't know if they use a pan or not.

Chi-Town, Is the pizza in the photo from Lou Malnati's? If the Lou Malnati chain ever opened a place in TV, the lines would be out the door every night...just my two cents. :mmmm:

Schaumberger, was just at Lou's a week ago. That is exactly what it looked like.

Does that pan Pizza have a really crispy crust?

Schaumberger, was just at Lou's a week ago. That is exactly what it looked like.
Have not had my Lou's pizza fix for a couple of months...I am overdue. My favorite is the "Lou" pizza. I will have to get one this week.

Allegiance, Yes, I would say a deep dish/pan pizza has a pretty crispy crust, at least the ones I eaten are pretty crispy (that would be Lou Malnati's, Uno Pizzeria and Giordano's here in the Chicago area).
I also love thin crust pizza. The only pizza I will not eat is Domino's (yuck).
