When someone talks about a canvas birdcage cover and think about the considerable wind we have here and wonder if it would act like a sail...and be.....uplifting?????

Do a search there are a number of birdcages that have the cover you are looking for. Seems that there are more near SS than other areas

Instead of canvas, we had 50% sunlight reducing screening installed, works great, they also have 75% sunlight reducing screening. This allows airflow, but greatly reduces the sunlight. If you are after stopping rain, then this will not work for you. Just another option.

RK Products, Awnings and Sun Shades did an awning for us. We were happy with the sales presentation and the installation, the work ethic, and attention to detail.
The owner was a Villager, as I recall.
The phone number is 352-430-4430.
(It has been a while, but at the time it was Stormy who did the presentation and I think the installer's name was Tony--not sure, but pretty sure that was installer's name. -- Both have our recommendation.)
As someone else here in this thread said, it was not inexpensive.

Pictures, please. Our west facing lanai is a plus for swimming and sunsets but not for sitting.

Some of us northern types really like our west-facing lanais for morning coffee and reading the paper--and for the warm welcome home after being out and about on those rather cold January days here. I know there are those who feel they must besmirch west-facing lanais--but I consider ours to be a feature. :)
We have the awning because I like to sit under it outside. I am not a sun-worshipper, but I like to read outside sometimes. We also have shades on the sliders, to use whenever needed.
Ours is just an awning, but I have seen a shade over a pool and it was impressive.
Our awning has some kind of wind thing on it that is supposed to tell it to automatically retract if it gets too windy. But we can't vouch for that because we have never left our awning to its own devices. It is, of course, controlled by a remote so it's easy to take care of--if you remember to retract when you leave.......and who knows, maybe it can take care of itself. We just don't want to find out.

Sunshine Awnings (birdcage covers) are engineered to withstand 110 mph winds. A proper awning / cover can withstand significant winds. Look at some of the restaurants in Spanish Springs that have outdoor seating under permanent awnings.
