Can anyone recommend a scenic hiking trail not too far from the Villages?

Try Fort Cooper in Inverness. The trails are wide and there is not a lot of underbrush so you can easily walk side-by-side. Like most places in Florida, it is beautiful, especially down by the lake with the unpronouncable name
