I was in Publix at Colony Plaza today and they actually had yeast for sale. I don't even know what it is, but I bought some for a friend. But, based on the interest in it, I felt like I won the lottery.

Yes, I'm a yeast hoarder! Guilty as charged! I purchased 3 packs of it and they sell them in packs of 3 so I now have 9 yeast packets! Enough to make 9 loaves of the bread I fancy. Good for a 6 week supply. Now if I only get some flour!

Remarkable how it seems to have disappeared from store shelves. Found whole wheat flour last week at Walmart but yeast is gone.

Maybe you'd better get to baking. As I recall yeast has a shelf life, although it's been so long since I saw yeast, I can't remember what it is.

We purchase it in bricks of 1 pound and than we freeze it until we need it and last for a year or more

I make three big loaves of challah with 2 packs of yeast. Best french toast in the world.
Anyway to the OP - that's what the yeast is for. For making bread and similar bread-type items. At one point, you couldn't find bread in any supermarket - people were actually snapping them up first thing in the morning and the shelves were empty within the first hour.
If anyone wants my challah recipe I can post it or DM you with it. Definitely a labor of love; it takes several hours, and you do it 100% by hand (literally). No mixer, no breadmaking machine. A bowl, a wooden spoon, and your hands.

As a poster mentioned above, yeast is readily available on Amazon in one-pound packages. 2 1/4 teaspoons of yeast equals what is in a pre-measured packet. You can even buy a measuring spoon of that size.
The rest you can freeze.

Great exercise doing it by hand. We do it every 6 months or so and will make a couple of loaves and several dozen smaller rolls, perfect for breakfast.
We use a machine for kneading much easier.

For those of you who utilize yeast for baking bread, try room temperature beer. I use it all of the time (for baking haha) and it works great. It gives the bread a wonderful flavor. Give it a try.

You are so funny. Yeast is used to make bread, pizza dough, buiscits, etc to rise. Good job getting some for a friend. I could not find any either, it was like trying to find TP.

If brewers yeast gets in short supply, we will have to turn to China to get some here. A world without beer is unimaginable. Great source of vitamin B you know and hops have been proven to strenghten bones.

There is no shortage of yeast, it a production problem with packing for the home baker in those 3 counts strips or small jars. Most home baking is down over the holidays Thanksgiving-Christmas so the stores have plenty for us then. Come January everyone goes on a diet and no one is baking so the production goes down and the yeast makers are packaging for resturants/bakeries that use large amounts, with resturants closed down demand has tanked except for the home baker. So now companys are scrambling to get those home size packs back out but who is working in a big production plant?
As far as flour everytime I go into Aldis they have plenty of 5lb bags. I am wishing I had kept my bread machine before we moved down here.

Bread baking has become very popular you use it for that or maybe she is brewing her own beer.

It's true that yeast is hard to find now, especially fast rising yeast. I've seen yeast for sale at rip off prices on E-Bay selling for 10 to 20 times the normal prices. The yeast from China is cheaper, but I wouldn't want to buy that yeast. I didn't buy any of that yeast from E-Bay.
I saw that Bread Flour in 25 pound bags for less than $9 was available at one of the Sam's Clubs in our city about a week ago. The other 7 Sam's Club stores were out of stock. I drove across town and bought a couple bags. There was a pallet of at least 100 bags in the store. The bread is better if you use Bread Flour instead of General Purpose Flour, but Bread Flour is harder to find.

I just got a 1-pound brick of Fleichman's from Amazon last week. Product of Canada, in a blue and white bag. It was $12.48, but I see now it's backordered till May 22.

You can freeze yeast??? I always bought the "activated dry yeast" in little yellow packets. Fleichmanns, I think.... I didn't buy the foil cubey ones. I will have to look into this. I have nothing better to do. What would I do without TOTV, in this unusual time...…..

My challah recipe: yields 3 medium-large sized loaves. Total prep time including rising - a few hours. Don't pre-heat the oven until the final rise, after applying the egg wash. Oven at 350°
2 pkg active dry yeast
1/2 c warm water (105-110°)
1/2 c sugar
8-8.5 c all purpose flour
5 large eggs
3 tbsp veggie oil (I use canola or canola blend)
1.5 c lukewarm water + 1 tsp water
PREPARE 3 BOWLS OF STUFF:
1. MIX in Small Bowl: yeast, warm water, 1/2 tsp sugar, pinch of flour in small bowl. Set aside.
2. MIX in Big bowl: 7.5 c flour, rest of sugar, salt.
3. MIX in Med. bowl: 4 eggs, veggie oil, water. Set aside the 5th egg.
COMBINE BOWLS:
4. Mix egg bowl into Flour bowl.
5. Mix yeast bowl into Flour/Egg bowl.
6. Knead til smooth/elastic, add more flour as needed.
WHAT TO DO WITH THE DOUGH:
7. Cover this big kneaded wad of dough, IN that big bowl, with a moist towel. Set out on the Lanai (or other warm place) to rise for around an hour, until it doubles in size.
8. Punch down the enormous fluffy wad of dough (don't knead it again, just lift it out of the bowl and put it right back in), and let it rise again for around a half hour, when it should double in size again.
HOW TO SHAPE THE BREAD:
9. Cut into 9 somewhat even chunks. Roll each piece til they form "ropes" around a foot long each**. Braid 3 of these ropes together to make a loaf. Do that again, two more times, to make 3 braided loaves.
10. Put on no-stick or lightly greased cookie sheet. You'll need a BIG cookie sheet for 3 loaves.
11. Mix 1 egg, 1 tsp water, brush or spoon on loaves (the egg wash should coat the surface of each loaf and get just a little into the grooves where each "rope" meets in the braid).
12. Let the loaves rise ONE more time for around a half hour.
** By "foot long" I mean maybe a foot, maybe 18 inches. I never actually measured it. You know the plastic core that you slide your toilet paper roll over, that goes in the toilet paper holder that sticks out of the wall in your bathroom? It should be thinner than that plastic core, so however long it ends up being, when the rope is that thick.
BAKE 350° for 25 minutes or until the tops of the loaves are a golden brown.

Very similar to the recipe we use but would separate half the eggs in whites and yolks and use those whites for the egg wash.
We also substitute soft wheat flour 6 cups for 6 cups of white flour) to add fiber into the challah but add rising times.

Awesome! Thanks for the well written descriptive recipe.
Hope you all enjoy making it! Definitely not for folks with arthritis in their fingers, but EXCELLENT hand/finger/shoulder exercise for everyone else. Don't get discouraged if your thumb starts to cramp when you're mixing - just switch to the other hand for awhile, and switch back again.
Also I should've said you need a floured kneading board, definitely some sort of wood. Mine is bamboo, doesn't really matter what tree it comes from.
Also forgot to let you folks who don't ever make bread from scratch know - the small bowl with the yeast that you set aside, if you're doing it right, will look like the living plasma from the planet *#OINEA##.222 when it's ready to dump into the big bowl. Do not be afraid, it won't try to kill you.
Lastly: You CAN cut the whole recipe in half, to produce one extra-large loaf, OR two almost-medium loaves that you can set into meatloaf pans if you prefer a uniform rectangular shape.

BTW Colony Publix had yeast this morning, 3 bags to a package.
Also selling a yeast drink made from a jar that almost had me thinking it was regular yeast for making bread.
