Thanks!

Thanksgiving stuffing would not be right without Bells. It’s in all the supermarkets where our home is up north. If you can’t find it in Florida, it’s always available from Amazon. A tablespoon of Bells will also help enhance the flavor of your gravy stock. Have a wonderful Thanksgiving : )

Publix doesn’t seem to carry it anymore and sold out at Walmart.

I ordered it directly from Bells.com.
My Mom always used it, then me & now our Son.

Thank you for your responses.
Hoping everyone has a wonderful Thanksgiving.

As an aside.
When preparing turkey to roast, is it the American way to put the stuffing inside the rear end, and sausage meat at neck end, cover bird with bacon as many do in UK?
Do you cook stuffing/sausage meat in separate dish/tray?

We call it Turkey Dressing, not stuffing, and it isn't stuffed since someone in the family read something about Salmonella. We cook it as a side casserole and I have prepared three different kinds...and served them all as choices. We had a son in law who liked cornbread, husband liked oyster and most who liked celery onion. NONE had sausage, but I am open to it. Sounds great. When I reached adulthood, all Thanksgivings were at MY house so I have no clue what other people eat.

Keep suggestions coming.

P.S. Does anyone put giblets in the dressing/stuffing? I boiled them for years and added them, now I give them to the kitties and put cooked ahead chicken in the dressing/stuffing.

it's a blend of various seasoning, including thyme & sage, like you already use. it's got this kind of distinct flavor, that once you have it, you'd probably add it again year after year. it's the flavor of Thanksgiving:icon_wink:

I believe that here also, the trend now is to cooking separate the 'dressing' because of the Salmonella threat.
We only have turkey at Christmas in UK.
I always liked the old way, as the 'stuffed' bird always tasted more moist.
Giblets were boiled down for gravy, then fed to dogs/cats.
Much prefer a nice leg of lamb myself!

The great thing about stuffing is the wide variety of recipes!! We have a sausage and chestnut stuffing which we have used for years. Started using canned chestnuts since they were already skinned. Have had to order the chestnuts from Amazon since we couldn't find them here at Publix, Fresh Market or Walmart.

WM is the only place I have seen that sells it here. But you can make your own and keep in an air tight jar, or, just make the quantity you need. Here are the ratios of their formula, just double, triple, to make your own jar by doing 4 or more times each of the measures given.

YIELD: 1 serving
UNITS: US
INGREDIENTS
Nutrition

1⁄4
teaspoon thyme
3⁄4
teaspoon sage
1⁄4
teaspoon marjoram
1⁄4
teaspoon rosemary
1⁄4
teaspoon black pepper
1⁄4

A holiday turkey with stuffing NOT cooked all day in the turkey with the natural juices flowing through it all day, unthinkable in our old Midwestern town. Funny how people from various locations do things ! Never put the giblets in the stuffing, dried bread, eggs, spices, celery were main ingredients, most families from our area have their own "secrets" to add like a bit of onion and even chopped cranberries and pecans ! Giblets are always boiled GENTLY in our family, so as not to get tough, and then diced to be added to the gravy, with some gravy reserved for the children who usually do not want giblets in theirs. :icon_wink:

Not the same to me, I tired it. I think the "secret" that makes Bell's special is the NUTMEG, and not over doing the sage like most poultry seasonings maybe ?

Here is their website;

Where To Buy | Bell's Seasoning & Foods (https://bellsfoods.com/where-to-buy/)

They are located in Weymouth, MA. I went to school with a daughter of the family that owned the company. They at one time also produced powdered flavors for mixed drinks. Not sure if they're still in that business.

This thread suddenly made me recall one of my earliest memories, probably because it was so embarrassing to me at the time. My mom was in the middle of cooking dinner and realizing she was out of a certain seasoning, she sent my 5 year old self next door to ask the neighbor if she had any that could be borrowed. When I asked the neighbor what my mom had told me to say, the neighbor got a weird look on her face and said to wait a minute. Shortly thereafter, she came back with a small vase and a few bright flowers in it. When I took it home, my mom laughed really hard (I thought at first it was at me), she then called the neighbor on the phone and sent me back for the real "Kitchen Bouquet."

I just searched and even 65 years later - they still make it. lol

we were surprised about 5 years ago in late January when we tried to find Bell's Seasoning at the local Publix's that we shopped at in Ft Lauderdale. The manager told us that it was a 'seasonal product' and that they were out of stock.

we ended up 'borrowing' some from a neighbor, ever since we've kept a backup box of Bell's in the cabinet

both my wife and I grew up with Bell's seasoning and mild sausage incorporated into the stuffing...and that's how we always make...just can't help ourselves.

Our stuffing consists of chopped up onions, celery, carrots, and apples sautéed in butter and olive oil with lots of garlic and bells seasoning. I then add some chicken stock and mix in Arnold’s stuffing mix. Half goes in the bird and the other half is cooked in a casserole dish. The key is to not pack the stuffing too tight in the bird, so that it gets heated to a safe temperature to kill any possible salmonella. We never tell my vegetarian sisters about the chicken stock, and they rave about the stuffing.

The birds neck and giblets get boiled down, along with a bunch of spices (including some bells seasoning), to make the gravy stock. I also deglaze the turkey pan and use the drippings to enhance the gravy flavor. And the gravy is thickened with a roux made from the turkey fat and flour.

It’s going to be a lot of work this year to only feed 5 (rather than the usual 35) people. Cooking a small 12 pound bird this year instead of the usual 30 plus pounder. At least I won’t have to set the alarm at a ridiculously early hour to get the bird in the oven. And best of all, a Covid silver lining, is that I won’t have to listen to all my moonbat sisters bitching about politics this year, so I got that going for me : )
