We have a fair amount of leftover turkey and I'm looking for some tried and true recipes. Casseroles, stews, chili, soup, salad, stir fry - all ideas appreciated.

Here's my favorite:
Turkey Sandwich
2 slices of Wonder Bread
white turkey meat
mayonnaise
salt
pepper
Place the slices of bread on a cutting board
Spread a thin layer of mayonnaise on each slice
Add turkey meat to one bread slice
Sprinkle salt and pepper on the meat
Lay the the empty slice on top of the meat (mayonnaise side down)
Cut the sandwich in half diagonally
Enjoy

That's what my husband loves, plus he adds sliced pimiento stuffed green olives. Must be Wonder Bread white sandwich bread because of his childhood turkey sandwiches.:icon_wink:
Other people add stuffing and cranberry sauce to their turkey sandwich.

Change the mayo to mustard add a sour pickle and life is good.

My fave is a turkey pot pie. I buy pre-made pie shells (I suck at making my own), make my own white gravy (butter/flour roux with chicken stock or milk) then mix it with cooked onion, celery, mushroom, peas, carrots, herbs/seasonings and leftover turkey cubes. All into shell and add another pre-made shell on top and bake. Major yummy comfort food. There's tons of chicken pot pie recipes on line, just substitute turkey for chicken!

Another fave is a stir fry. Onion, carrot, celery, broccoli, mushroom, ginger, garlic, spices cooked in butter/oil/ chicken stock, add turkey chunks, soy sauce and sesame oil at the end and serve over rice.

Make Turkey Scotch eggs !! Mince the turkey coarseley add seasoning (left over onion stuffing would be good) mix with a beaten egg and wrap around a peeled semi-hard boiled egg. Shallow fry on all sides till golden brown all over.
I usually make these with sausagemeat and eat either hot or cold - hot with new england baked beans and fries - cold with pickles/chutney small fresh tomatoes and lettuce salad. If you don't know what scotch eggs are either google it or make friends with a Brit. YUMMY !!!

Thanksgiving Leftover Casserole
Ingredients
4 cups seasoned stuffing cubes
4 cups cubed cooked turkey
2 celery ribs, finely chopped
1 cup frozen peas
1 cup fresh or frozen cranberries
1/2 cup chopped sweet onion
1/4 cup all-purpose flour
4 large eggs
3 cups 2% milk
1 can (8-1/4 ounces) cream-style corn
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
1/3 cup coarsely chopped pecans
Directions
Preheat oven to 350°. Layer first 6 ingredients in a greased 13x9-in. baking dish. In a large bowl, whisk flour, eggs and milk until smooth. Add corn, salt and pepper; mix well. Pour over top; let stand 15 minutes. Dot with butter and sprinkle with pecans.
Cover and bake 35 minutes. Uncover and bake 30-35 minutes or until a knife inserted in the center comes out clean.

Kentucky Hot Brown
Layer the ingredients in
oven proof casserole dish or ramekins
Toast
Turkey
Cover generously with Mornay
Add tomato slice
Two strips of cooked bacon
Broil until bubbling hot
Heart attack optional
Note: Don't tell anyone but I have been known to cheat and use 4 cheese pasta sauce instead of Mornay. Never ever ever use any kind of yellow cheese sauce. The God of Derby will smite you.
Also I do love turkey enchildas too.

No No, you forgot to spread with mayo AND cranberry relish ! Also, learned this one at the Wah Wah and now do it at home ! Every year they have the gobbler sub.
Carved turkey and a sub roll, with DRESSING & cranberry all heated under the broiler being careful NOT to burn ! Love making these at home now, but also like the old standard, turkey, mayo, lettuce leaf, and white bread.

My DH favorite is toasted turkey sandwiches. Just make like a toasted cheese but add a thin slab of turkey with a little bit of salt inside with your cheese. I always preheat the turkey in the microwave first.
Also....instead of butter on the outsides brush some flavored olive oil on each side before putting in the frypan.

My husband loves leftover Turkey cut up into bite sized pieces mixed with leftover gravy. Warm in a sauce pan with salt and pepper to taste and a knob of butter. Then pour over buttered toast! :a040:

Tuscan Bean and Turkey Skillet
1 T Olive Oil
1 t basil
2-3 cloves garlic
2-3 cups turkey - cooked and chopped
1 16 oz can diced tomatoes
1/2 c sliced olives
2 16-oz cans Great Northern Beans - rinsed and drained
Heal oil in a skillet over medium heat. Add garlic and cook for a minute or two, but don't let it brown. Add remaining ingredients and continue to cook until it's hot and bubbling.
Fast, easy, and good.

Thanksgiving Nachos
3 cups shredded turkey
1 tablespoon spicy poultry rub
½ teaspoon salt
1 (13-ounce) bag corn tortilla chips
3 cups Gruyere or white cheddar cheese, divided
3 cups stuffing
1½ cups leftover gravy
Preheat oven to 350 degrees.
In a medium bowl, mix together the turkey, poultry rub and salt.
On a 13-by-9-inch baking sheet, layer the tortilla chips. Sprinkle 1 cup cheese over the chips. Scatter the stuffing on top and the turkey over the stuffing. Drizzle gravy over the turkey.
Finish the nachos by sprinkling the remaining 2 cups of cheese on top. It may seem like a lot of cheese, but it is not.
Bake nachos uncovered for 20 to 25 minutes.
Serves 8.

Leftover Turkey Corn Chowder
1 tablespoon butter
2 tablespoons olive oil
1 medium onion, diced
1 large carrot, chopped into cubes
½ cup chopped celery
½ jalapeno, de-seeded and diced
Salt and freshly ground pepper, divided
½ teaspoon allspice or pumpkin spice
3 cups chopped or shredded cooked turkey
3 russet potatoes, peeled and cut into 1-inch cubes
1 can (14.75 ounces) cream-style sweet corn
1½ cups sweet corn, frozen or canned
4 cups chicken or turkey broth
3 cups whole milk
1 tablespoon lemon juice
Heat butter and olive oil in a Dutch oven over medium-high heat.
Add onions, carrots, celery and jalapeno, and saute. After 3 minutes, add salt, pepper and allspice or pumpkin spice. Cook for 3 minutes, stirring occasionally.
Stir in the turkey and potatoes. Cook for 3 minutes.
Add cream-style corn, sweet corn, broth and milk; bring mixture to a boil over high heat.
Reduce heat to a low simmer for 20 to 25 minutes, stirring occasionally.
Remove pot from heat and lemon juice. Give the chowder a good stir and adjust seasonings to your liking.
Serves 4 to 5.

Almost forgot that one, with the puffy philo pastry sheets, mushrooms, peas.... yum.... that's tomorrow's dinner ! I'm off to Publix for frozen philo !
