Has anyone ever gotten rid of their dishwasher and put something else in that space?

Contact home warranty, they will be able to tell you the make/model of your original cabinets and the installer. Then call the installer and see if they have a cabinet that will match. If not, IMHO, I would look into a custom or semi-custom wine rack, shelves or similar that would fit the available space.
If you cannot find any cabinets that fit, you may be able to stain some wood to match and put in glass shelves or similar.

What ever you do I would make it reversible as future buyers may very well want a dishwasher back in there. Also, you will want access to the water line (in case of leaks) and you will need to cap off the drain line in the garbage disposal.

While I would never get rid of my wife of 53 years I could think of a few interesting things to fill her spot.

Oh wait, never mind, you meant the other dishwasher!

Yeah, the first house we bought in TV had it removed.

The prior owner put a wine tray/cart thing in the space and finished it out with what amounted to veneered plywood.

I had it out and a dishwasher installed about 3 days after close.

Dishwashers are standard in size based upon the standard height of your countertop. Exceptions are drawer type dishwashers. Perhaps there others but basically they all fit in the same space.

Installation varies if you have granite or any solid stone type counters.

So, no, I only replaced with another dishwasher.
