First- I really love Paisanos.
I'm just curious about a phone conversation I had with the person answering the phone.
I called and asked, "Is there a line waiting to be seated- or do you have seats open"? The young woman answered, "I'm sorry, I can't divulge that information". Huh? Why would that be protected information- who might be at risk?

If you are sure you dialed the correct number then I would ask a manager the next time you go there. Not that there is a good answer (there isn't) but it will let the manager know that one of his/her employees is potentially costing him business.

everyone, in case you are a whacko who wants to do something stupid. . . don't assume everyone is nice especially if you didn't identify yourself. . . . could be the intonation of your request, etc. could be all kinds of other reasons why public gathering places don't won't to give out too much information. .
for the same reason many don't answer phone calls from numbers they don't know, business has to pick up the phone, and then go from there. . so I get it. . you may have sounded like a lunatic to the woman answering the phone. . especially with all the ethnic stupidity going around at the moment. . .
this time i side with the pizza place. . but stop in during a quiet time of day, ask for the manager and ask him about the response. His answer might surprise you.

Piesanos, not Paisanos. Paisanos is another pizza chain up north.

I do recall some advice out there that restaurants shouldn't say if there is a wait or a line. IIRC it did have to do with bad guys targeting people. I can't find a reference to it now. It's a bit paranoid but that's probably the only reason.
Plus the place sounds like it's got mobster issues anyhow. :D

Personally, you couldn't pay me to eat a piece of their soggy, greasy, awful pizza. I even gave them 3 tries - which was 2 more than I should have - because it was so highly spoken of here. Otoh, it lowered my faith in the opinions of some others who post.

So if they said there are empty tables and by the time you showed up, a line had formed - would you be okay with that?
If they said there was a line, and you decided not to come, and the line had cleared up by the time you _would_ have come, should they be okay knowing that they cost themselves a customer in you that night?
On the other hand, if you had just asked if you could reserve a table, they could have told you "we don't accept reservations and there's a line around 20 minutes deep" or "there's no wait time, just come on in."

Sadly, you are correct. That's exactly what occurred last night at 8pm in Lewiston, Maine.
There was an active shooter situation in a restaurant and a bowing alley. Mass killings and injuries. I just saw it on the news.

Extremely sad. I posted a tongue in cheek reason for the hostess not divulging the attendance at her restaurant and an hour later this psycho goes postal. Not feeling good about it.

Easy enough to continue to explain the reason for your question- I’m asking because I’d like to eat at the restaurant at (insert time) and just wondering how long the wait may be for a table for two?
I would fault the restaurant management before I would fault any employee, there seems to be little to no training given to restaurant employee any more And the majority of them are hired with little to no experience.

I agree. Piesanos ultra thin crust pizza is consistent and very good. My biggest problem with pizza places is that most of them add way too much cheese and they do not use a consistent recipe. Apparently, a lot of people who make pizza think that every customer wants extra cheese, the more the better. Not true. The cheese and sauce should be applied in measured amounts, according to the recipe.

I always say that I could open a Thread saying “ it’s a beautiful day in The Villages”. Some would rsp “no! It’s cloudy”, “No the Developer makes too much”, “No I saw dog poop”…. Sorry, not trying to be nit picky. But, some Villagers think that Piesanos is the same franchise chain as the larger Paisanos franchise in the Northeast.
I lived in Fairfax, Virginia when they opened the first Paisanos restaurant. Now, there are about 36. When they opened Piesanos in The Villages, I thought it was the same chain until I checked the spelling.

IMO pizza a required taste. My standards for pizza comparing to godfathers. So no pizza down for my taste stacks up to godfather’s before the company got ruined. I find frozen pizza doctored up just as good or better than any pizza offered here. But, that me.

She could have said, "At the moment there are tables available, but don't be surprised if that has changed when you arrive- it's unpredictable". I'd be OK with that- in fact I'm smart enough to know that without being told.

We’re from San Francisco. My sister-in-law’s family ran a couple of pizza restaurants. One of them very famous. IMO No pizza south of the the Mason Dixon line is as good. Gotta ask for them to make sure it’s crispy. Then it’s OK. Piesano’s wedding soup is excellent.

We’ve got three squares and Sawgrass Mkt Place filled with people nightly. A mass shooter doesn’t need to call around to find a soft target crowd here.

I agree with the OP. Why couldn't she tell you what the current wait time is? I was there a few weeks ago, and they told me the wait time was one hour, so I left. I won't wait an hour to eat a meal.

I think you are making this way more complicated than it really is. My guess would be that the restaurant may have been busy and didn’t want to tell you that knowing that you would probably seek some other restaurant.

But the non-answer (or refusal to answer) was, in fact, an answer. Not only did the OP not go to the restaurant but they are now commenting on the lack of professionalism by whoever answered the phone. It would have worked out better for the restaurant if they had just provided the requested information.

Maybe that is why they did not give an answer to the OP. Restaurants fill and lines form quickly at certain prime times.

Er, no. The recipe for a good pizza is to shape, then toss the crust, lay it out on the pallet. The crust should be somewhere between 14-16". Dump a ladle of sauce in the middle and in a circular motion, use the bottom of the ladle to spiral the sauce out to around 1/2 inch from the edges. Then grab a palmful of cheese and sprinkle it over the sauce, repeat if you have small hands. Get a couple pinches of oregano, sprinkle that over it all. Then drizzle around a tablespoon of olive oil from a squirt bottle in a spiral over all of that. Slide the pie in the oven at 700°F for 7 minutes, until the crust edges bubble and start to char. That's a large cheese pizza.

LOL. So, if you have 3 or 4 people making the pizzas, don't bother to tell them exactly how much sauce and cheese to add. And, if someone orders a 16 inch pizza, and gets a 14 inch, who cares? Or, if a customer wants a thin crust, but gets a thick crust, so what? Let the employees just wing it. All of the customers will be fine with that.

If I will get to a restaurant for dinner in say 30 minutes I do find it useful to find out how busy they are now. Full at say 5 30 means long wait at 6.

This has happened to me, as well. Since I am a regular there and know pretty much all the employees, including all the managers; I asked them why this has happened. The answer is that the phone rings ONLY in the take-out side of the building, not at the hostess stand. And if they are busy in take-out (which recently has been up to an hour and a half wait), they can't go outside to check and even if the could, they can not determine the wait time since they are on the other side and not engaging with the seated restaurant area. They run it almost like a separate business. I hope this helps and clears things up a little.

1) I care. Because the first time we went we met another couple there for dinner and there was a 45 minute wait- they wrote down my cell phone number. We then had to find another place to eat. 2) You are amazed that someone would post such a stupid question and that so many stupid people would answer. I'm amazed that in this world so full of nice people willing to help each other, you are so filled with poison that seeing these acts of good will would infuriate you.

Simple- at least I consider it simple. It takes a couple of minutes for me to drive there. If she told me it was an hour wait, then I would have a 55 minute wait to be seated. Don't know about You, but to me that is important information. Do you see why I consider this Simple?

1. This is completely idiotic. Why on earth would you not have the option when calling to "press 1 for reservations / hostess desk" or "press 2 for the carry-out desk" ? Today's phone systems easily accommodate that and it would improve flow and make customers happy leading to return business.
2. Also due to poor management. There is no reason to have that long of a wait in carry-out. Yes, I know it's hard to get workers. There has to be a better way. Piesano's is my favorite pizza in TV. For carry-out, I always place the order online, and it gives a pick-up time. But there is often a long line that you have to stand in just to get to the counter. Poor planning: have 2 counters, one for orders and one for pick-up of orders, with 2 separate lines ! Damn, I missed my calling as an efficiency consultant.

The correct name of the restaurant is "Piesanos". It is a play on the Italian word "Paesano".

What if she told you there were seats open and when you got there the place was packed? The first thing you would say to her is I thought you told me there were seats open? Does she need to deal with something like that? She probably should have phrased her answer differently but I get her point
