You do not change the sequence of the cards when you cut a deck of cards. Take a new deck of cards and cut them. You will find that the cards are all in the same sequence no matter how many time you repeat the cut process. You only change the start of the sequence. The only way to change the sequence is to shuffle the deck. If you pay close attention to the film, when he shuffles the deck, he pulls both halves of the deck back out of the shuffle and places them back on top of each other thereby making it only a cut of the deck.

You have a good eye. I missed the "fake" shuffle when I watched it. Even knowing that it is a very entertaining trick. I enjoy videos like this, especially slight of hand. Here is a couple from a guy named Rickey Jay:
