Are there any BBQ judges in TV?
I am a member of the Kansas City Barbeque Society (KCBS) and enjoy judging BBQ contests. Unfortunately, the KCBS sanctions only a half-dozen or so events a year, in Florida. The Florida Bar-B-Que Association (FBA) sanctions over 30. I think I'll apply for FBA membership and sign up for one of their judging seminars to obtain FBA certification.

Yes, probably 20-30...........they post on here all the time.

Not me BUT - I would be willing to sample ANY BBQ that you want. I will -once filled - give you my most honest opinion.
By the way - I could use a beer or two to wash it down with.

Jeff let us know how that works out. We are also KCBS judges and only get to do Lakeland when we are down here for the winter. However we spend the other 6 months in Tennessee and there are plenty of BBQ competitions there.
We would be interested also in joining the Florida group. Let us know what you find out.

Although I try to be a good judge of BBQ, I am not a competition BBQ cook and my only experience with a kamado grill was about 55 years ago. When I was a kid, my father got one from Japan.
Google is your friend. Search the internet. The web should have plenty of recipes, suggestions and tips for using your new Primo XL.
I will try to give you one tip though. Whether you are grilling or BBQing (smoking), use a good quality instant-read thermometer to monitor the meat's doneness. Take the meat off the heat about 5°F short of your target and let it rest 10 minutes or more before cutting. At $89, the Thermapen (http://www.thermoworks.com/products/thermapen/) might seem expensive, but it's worth it.

I am a KCBS member and a CBJ. I have judged KCBS sanctioned events in Maine and in Florida. I will be judging at Pigfest 2013 in Lakeland next month.:pepper2:

Right now, it says that there will be a seminar in Oviedo, FL, Friday, May 24, 2013, at 6:00pm. I have a couple of emails out trying to find out what the chances are of being able to judge the next day at the Oviedo 2013 BBQ Blowout!

I got a very nice reply from FBA representative, Tony Wolfe, about the judging class and contest in Oviedo on May 24th & 25th.
Welcome You can go online and sign up for the judging class in Oviedo. If will be hard to get in to judge this contest but if you stay around on Sat. sometimes judges do not make it and we use the judges that are there. But I can not say that you will get to judge. ...

We are also doing Lakeland next month it will be our 5th straight year. We are also signing up to do the Good SAMs event in Tampa. They just posted the info on the Good SAMs tour on the KCBS website.

I realize that chili contests are legit and that judging an event is serious business. This thread reminded me of a story I read recently. My apologies to any judges that might be offended. I mean no harm.
Frank is an east coast native who was visiting Texas. Below is his story.
Frank: "Recently, I was honored to be selected as a judge at a chili cooking contest. The original person called in sick at the last moment and I happened to be standing there at the judge's table asking for directions to the Coors Light truck, when the call came in. I was assured by the other two judges (native Texans) that the chili wouldn't be all that spicy and, besides, they told me I could have free beer during the tasting, so I accepted."
Here are the scorecards from the event. Frank is Judge #3.
Chili #1: Eddie's Maniac Monster Chili
Judge #1 -- A little too heavy on the tomato. Amusing kick.
Judge #2 -- Nice, smooth tomato flavor. Very mild.
Judge #3 -- (Frank) What the hell is this stuff?! You could remove dried paint from your driveway. Took me two beers to put out the flames. I hope that's the worst one. These Texans are crazy!
Chili #2: Austin's Afterburner Chili
Judge #1 -- Smoky, with a hint of pork. Slight jalapeno tang.
Judge #2 -- Exciting BBQ flavor; needs more peppers to be taken seriously.
Judge #3 -- Keep this out of the reach of children. I'm not sure what I'm supposed to taste besides pain. I had to wave off two people who wanted to give me the Heimlich maneuver. They had to rush in more beer when they saw the look on my face.
Chili #3: Ronny's Famous Burn Down the Barn Chili
Judge #1 -- Excellent firehouse chili. Great kick. Needs more beans.
Judge #2 -- A beanless chili, a bit salty, good use of peppers.
Judge #3 -- Call the EPA. I've located a uranium spill. My nose feels like I have been snorting Drano. Everyone knows the routine by now. Get me more beer before I ignite. Barmaid pounded me on the back, now my backbone is in the front part of my chest. I'm getting pie-eyed from all of the beer.
Chili #4: Dave's Black Magic
Judge #1 -- Black bean chili with almost no spice. Disappointing.
Judge #2 -- Hint of lime in the black beans. Good side dish for fish, or other mild foods; not much of a chili.
Judge #3 -- I felt something scraping across my tongue, but was unable to taste it. Is it possible to burn out taste buds? Sally, the barmaid, was standing behind me with fresh refills. That 300-lb. woman is starting to look HOT... just like this nuclear waste I'm eating! Is chili an aphrodisiac?
Chili #5: Lisa's Legal Lip Remover
Judge #1 -- Meaty, strong chili. Cayenne peppers freshly ground, adding considerable kick. Very impressive.
Judge #2 -- Chili using shredded beef, could use more tomato. Must admit the cayenne peppers make a strong statement.
Judge #3 -- My ears are ringing, sweat is pouring off my forehead, and I can no longer focus my eyes. I farted and four people behind me needed paramedics. The contestant seemed offended when I told her that her chili had given me brain damage. Sally saved my tongue from bleeding by pouring beer directly on it from the pitcher. I wonder if I'm burning my lips off. It really ****es me off that the other judges asked me to stop screaming. Screw those rednecks.
Chili #6: Pam's Very Vegetarian Variety
Judge #1 -- Thin, yet bold vegetarian variety chili. Good balance of spices and peppers.
Judge #2 -- The best yet. Aggressive use of peppers, onions, and garlic. Superb.
Judge #3 -- My intestines are now a straight pipe filled with gaseous, sulphuric flames. I pooped on myself when I farted and I'm worried it will eat through the chair. No one seems inclined to stand behind me anymore. I need to wipe my butt with a snow cone.
Chili #7: Carla's Screaming Sensation Chili
Judge #1 -- A mediocre chili with too much reliance on canned peppers.
Judge #2 -- Ho-hum; tastes as if the chef literally threw in a can of chili peppers at the last moment. **I should take note that I am worried about Judge #3. He appears to be in a bit of distress, as he is cursing uncontrollably.
Judge #3 -- You could put a grenade in my mouth, pull the pin, and I wouldn't feel a thing. I've lost sight in one eye, and the world sounds like it is made of rushing water. My shirt is covered with chili, which slid unnoticed out of my mouth. My pants are full of lava to match my shirt. At least during the autopsy, they'll know what killed me. I've decided to stop breathing; it's too painful. Screw it; I'm not getting any oxygen anyway. If I need air, I'll just suck it in through the 4-inch hole in my stomach.
Chili #8 Karen's Toenail Curling Chili
Judge #1 -- The perfect ending, this is a nice blend chili. Not too bold, but spicy enough to declare its existence.
Judge #2 -- This final entry is a good, balanced chili. Neither mild, nor hot. Sorry to see that most of it was lost when Judge #3 farted, passed out, fell over, and pulled the chili pot down on top of himself. Not sure if he's going to make it. Poor fella, wonder how he'd have reacted to really hot chili?"
Judge #3 -- Oh God.........

Thanks for the laugh. No offense taken. I have judged chili for the International Chili Society (ICS) and from my observations there are only two parts to your story that are true. You do get free beer to cleanse your palate and Texans are crazy.
P.S. I love a good chili, but I would rather judge BBQ.

Yes, the KCBS Sam's Club National BBQ Tour is currently scheduling their Tampa competition on Saturday, Feb. 16, 2013.
If you are a certified KCBS judge and want to participate in any of the 30-some nationwide contests, go online at KCBS.us as soon as registration opens and sign up. I have done two of the Sam's Club events and they were tough to judge. Excellent BBQ. I intend to be in Tampa.

OK, I am making my first smoked briskets this weekend on the PRIMO. If you were judging, what are the qualities you would be looking for? I am making my own rub and sauces- a mustard sauce to start out with and then a beer sauce and then a BBQ sauce all for different stages. Made pork ribs and chicken last weekend and it was superb my company said. That was my first attempt at cooking on the PRIMO. Leftovers were awesome too. I would like to know what a judge would be looking for to say a smoked brisket is a 10!

"A KCBS judge evaluates barbeque in three different criteria: taste, appearance and texture."
"The scoring system is from 9 to 2, all whole numbers between two and nine may be used to score an entry. 9 excellent, 8 very good, 7 above average, 6 average, 5 below average, 4 poor, 3 bad, and 2 inedible."

Well... I judged Sam's Club at Tampa (2/16/2013). The day was a little chilly and a little more than breezy at times. Had a short bit of rain. Had some good cue though. IIRC, there were only 30 teams and we were expecting more. They worked it out so that all the judges that showed up got to do some judging. I have to say that between Troy Black and Mike & Theresa Lake, they have got it nailed as far as running a BBQ contest. Kudos to you guys and your whole team. I enjoyed myself. Thank you.

Just wondering if you all could create contests in TV and also coach some of the excellent cooks in the local area to move on to state and national competitions. You all have a lot of experience. Just a thought. I also hope you post in the Restaurant section.

Well, here's the way I see it. Good barbque is different in different parts of the country. I am a Texan and mustard sauce is NOT barebque. Apologizes to my Carolina friends. I have enjoyed barbecue in many areas of the country but they are all different. Good barbecue is subjective. My favorite is good ole slow cooked brisket.

Had about 50 teams competing in today's rain. We were high and dry because the judges' tables were set up inside the FAA building. At my table, the chicken entries and the pork entries were nearly all excellent. Generally, the pork ribs and the beef brisket didn't fair as well, but still good 'cue. I met some interesting people. All in all, it was a very good day.
Is anybody going to the Plant City Pig Jam (http://www.plantcity.org/Plant%20City%20Pig%20Jam.cfm) next Saturday (11/23/2013)?
