wine rack?

We are planning on building an Aspen in Gilchrist. I have looked online at most of the designer models and they all have nice wine racks in the kitchen. Although really pretty, we have no use for the wine rack. Have any of you eliminated this feature and if so, what did you do in it's place?
Upper cabinets, of course are a logical choice, but I was wondering about a full length pantry? Or a closet?
I am also curious about the wall that separates the wine rack area from the rest of the kitchen. Is it a structural wall, or can it be removed to allow a longer unbroken counter top?
Curious minds want to know!

We just built an Aspen. Although we consume wine, we also saw no need for the wine rack. When we went to the design meeting we also wanted another closet put there. No can do. So, we added another cabinet in it's place. Yay, more storage! We also put in a double oven in the kitchen in place of the pantry but.....put the pantry in the laundry room where the laundry sink is. Laundry sink in the garage. This way dirty hands etc...will be clean before coming into house.

If you select a free standing range as opposed to a wall oven I am pretty certain you can add a pantry but not in the area where the wine rack is showing as located.

I do plan on a wall oven, but just a single, with separate cook top, and I really like the idea of the extra pantry in the LR and the sink in the garage. I am in Utah and will not be there before the design meeting which is Thanksgiving week. So I have to try to get as much detail info as possible from this great forum!!!
Still wondering what that wall if for. It does not appear to be structural, but I can't figure out why it is there. My hubby and I have designed and built (hands on) several homes over the years and can't figure out why this little wall is there. so strange...
