We are not interested in all the snokel, dolphin, sea horse, pirate cruise, catamaran, turles, flamigo, butterfly type tours which there seems to be an abundance of listed for Nassau.
If you have been there what do you recommend for the couple of days we will be there?

If you are staying at Atlantis there is plenty to do. Other wise you can enjoy the Straw Market and other stores. Take a guided tour (about $30 pp) and see the island. The National Gallery of Art on West St (I think). Cable beach is pretty to just sit and enjoy the water.
I have seen a Segway Tour but not been on it. There is a nice fort and the Queens Staircase. They do not take long to walk thru.

If you are golfers, try and get out on The Ocean Club (associated with Atlantis).
Played both it and Pebble Beach and IMHO it gives Pebble a real good run for its money when it comes to beautiful scenery!!!

There is also a small private zoo you can walk around and see all the animals. I can't recall the full name but the name ended in gardens. We stayed once in Atlantis and the other times we stayed at the Breezes resort.

If you're lucky, you might just stumble into some gambling there.

I think it might be Adastra (or similar) Gardens.

I believe you are right. That name really sounds familiar. I do remember we paid a 20 dollar admission and got a rum punch and t shirt that actually fit. Good quality t shirt at that.

Contact the Department of Tourism and sign up for their People-to-People program. You'll get to spend at least one evening with someone who lives in Nassau. You'll definitely get to see things not on the typical tourist destinations. When I did it, the woman who was my "tour guide" took us to her nephew's birthday party, a couple of local clubs, a convention being held for women of the islands. It was wonderful and made that trip so very special.

I've been there a couple of times on cruises. Once I took a tour of the island trip offered by the cruise line contractor and really enjoyed it. On another visit I rode a water taxi from the cruise dock to Atlantis, which was an interesting narrated trip (passed Oprah's new mansion) and then at Atlantis there is the aquarium (pricey) and if you are interested in gambling there is a small casino. For shopping there is a market at the cruise docks.

There were a few other shops to go to. That's the last place I've been able to find Sea Dog brand tee shirts. I would stop by Senior Frogs for a few cold ones before catching the number 10 bus back to the resort

If you're there on Boxing Day or New Years Day you wouldn't want to miss Junkanoo, a parade with elaborate costumes. I'd spend time at the wonderful aquarium at Atlantis and admire the Dale Chihuly scuptures. Visit the British Colonial Hotel and stroll down Bay St. for local flavor. Ride around the island in one of the jitneys. Maybe see if there's a boat that goes to Rose Island. We anchored there for a month once in Nassau Harbor and thought it was a memorable place.

Three things: Rent Jet Skis and RIDE; Atlantis and it's water park & beach (you don't have to be staying there to use it ..pay to get in.); Crystal Palace Resort and Casino (Atlantis Casino and hotel and aquarium FREE) and all the grounds/marinas on Paradise Island!
