people who don't eat meat also celebrate St. Patrick's Day,
here's a quartet of great recipes from around the web that would be great additions to any Irish-themed feast.

Post Punk Kitchen's Mushroom Stout Pie With Potato Biscuits has an intense gravy and two kinds of mushrooms, which make it earthy and meaty. It can be made either with kidney beans or tofu.

Global Vegan Kitchen has a collection of St. Patrick's recipes, including Corned Seitan and Cabbage that's made in a slow-cooker.

Simply Recipe's Oatmeal Soda Bread isn't vegan, but is easily made that way by using egg replacer, Earth Balance in place of the butter, and substituting vegan buttermilk for the dairy variety. To make vegan buttermilk, for each cup required, place 1 tablespoon lemon juice or vinegar in a glass measuring cup. Add in soy milk to equal 1 cup. Stir and let stand for 10 minutes.

Good Stuff NW's Romanesco with Olives & Capers isn't really a St. Patrick's dish, but good golly it's green!

Default VPLs recipe for St. Patrick's day

How about St. Patrick's day four-leaf-clover soup?

1 four leaf clover (for luck)
4 medium potatoes
4 large carrots
4 medium onions
1 medium head of cabbage
4 garlic cloves
4 servings of garbonzo beans

Cook everything until tender and eat. Enjoy!

If this sounds a little off, it might be because I just made it up.

They all sound great. And thanks for the link to Vegan Kitchen. I will definitely remember to make a toast to St. Paddy with my green shake: 1 cup coconut milk, 1 or 2 ripe bananas, handful of strawberries, 3 handfuls spinach. Mix well in blender. My grandson loves these and my daughter-in-law loves him getting his spinach.
