I have a shelf-full of some excellent and favorite cookbooks but I thought it would be interesting to share some "original" recipes.

Minute chocolate mug cake...
Here's a goody.....barb MINUTE CHOCOLATE MUG CAKE...or...literally a "cup" cake...:clap2: 4 tablespoons cake flour or all purpose (plain, not self-rising) 4 tablespoons sugar / splenda 2 tablespoons baking cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips(optional) A small dash of vanilla flavouring 1 microwaveable coffee mug Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla flavouring... and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! Serve 2 if you want to feel slightly more virtuous.[/SIZE] |

I need a good recipe for meatloaf..Every time I make meatloaf, it tastes like my Italian meatballs..

Fruity Pebbles - a no-bake "cookie"
Fruity Pebbles
3 cups mixed dried fruits 1 cup chopped pecans grated rind of 1 lemon 1/2 cup toasted wheat germ, plus more for rolling 1/2 teaspoon cinnamon 2 tablespoons chocolate-orange liqueur (optional) Chop the fruits in a food processor to blend. (If they are very dry, soak them first in some warm water until soft, then drain.) Combine the fruit mixture with the remaining ingredients. Shape into small (½") balls and roll in additional toasted wheat germ. If you have extra nuts, you can use finely ground pecans for rolling instead of the wheat germ. 1+1/2 lbs 85% lean hamburg ( I like the combo ground veal, pork and beef) add mustard 2 tbsps. and ketchup 2 tbsps italian breadcrumbs 1/2cup, finely grated onion and garlic, S&P. Dry powdered mustard works also. Hub likes good old franco american beef gravy-sautee mushrooms and onions for a better gravy!. I prefer ketchup at times. A great sauce for steak?? Melt crumbled blue cheese into beef gravy to taste.mmmmmmmmmmmmmmmm NO CALORIES lol I better not see these on the special boards of local restaurants!!!! |

My meatloaf recipe is just like Ronda's, but I add one egg per pound of meat. I also splash in some milk with the breadcrumbs so the mixture isn't so dry. I find the loaf stays together better when it isn't so dry. I put a topping of ketchup on the entire meatloaf before baking. Have fun experimenting! |
Want a chili dog lol!!
I have a craving big time for a chili dog. (And NO...I am not pregnant lol :1rotfl:). I love all chili dogs, so am open to any ideas in different states. I also love the Coney Island Chili Dog, and one that I havnt had in years....on the hot dog trucks....it was an onion sauce, I think with alittle tomato sauce :shrug:. I think Sabrett's sells it, but was thinking of making my own. Thanks gals and guys! :icon_hungry:

I will definitely miss all the Coney Island Restaurants when we move away. You can get chili cheese fries as well as your hot dog with chili. Gyros too! I'll have to come back to get my Coney Island fix occasionally.:icon_hungry:

* 1 pound ground beef
* 1 1/4 teaspoons salt * 1/4 teaspoon ground black pepper * 1/2 cup chopped onion * 1/2 cup chopped bell pepper * 1 egg, lightly beaten * 8 ounces canned diced tomatoes with juice * 1/2 cup quick-cooking oats Topping: * 1/3 cup ketchup * 2 tablespoons brown sugar * 1 tablespoon prepared mustard Directions Preheat oven to 375 degrees F. Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf. Topping: Mix ingredients for topping and spread on loaf. Bake for 1 hour. |
Crock pot stew (easy) and also very good
In the bottom of the crock pot quarter one medium or large onion, add about 1.5 to 2 pounds of chuck roast. Add 3 or 4 carrots cut into one inch pieces, add 2 medium cut up turnip, white or yellow one can of cream of mushroom soup, 2 chopped celery stalks, 1 cup of red wine, salt and pepper cover to top with water cook all day on low. 2 hours before serving add 2 or 3 cut up potatoes You can use any root vegetables, some get overcooked so add toward the end. Serves about 8 and no work or clean up. |

Crab Appetizer
Mix at room temperature: 1 stick margarine or butter 1 jar Old English Cheese Spread 1 7 oz. can Crabmeat 1 ½ Tbls. Mayonaise ½ tsp. garlic powder ¼ tsp. seasoning salt 1 pkg. English Muffins Spread mixture on each muffin half. Freeze. Divide into 6 pieces. Store in freezer bag…….When ready to use, Bake on cookie sheet at 350 degrees for 20 minutes….Really really yummy…. |
Nothing like resurrecting an old forum when you're a newbie like me! We're moving down next month, so now I'm really snooping away at the site.
To moisten my meatloaf, I've started adding chopped veggies to the mix: like zucchini and sweet red pepper, chopped onion, mushrooms. It adds moisture, texture and great flavor not to mention the health benefits! My original recipe would be "Tortilla Rollups" There's various versions out there but my personal creation is: 1 lb cream cheese (or neuftchatel to keep the calories down) about 1 cup Pace picante about 1/2 C finely chopped cilantro 1 package fresh tortillas Mix cream cheese, picante (I use hot) and cilantro together. Add enough picante until it's a nice salmon color and a nice creamy consistency. Spread about 1/8 C mixture evenly over the tortillas. I leave one tortilla seperate in case there's too much goop on the other torts, I'll take those scrapings and put them on the last tort. roll them up, slice at an angle about 1/2" wide. Is a great appetizer. If you put the rollups in the fridge 1st before slicing, they will firm up to make slicing easier. Cover w plastic wrap or they will dry out. Enjoy! |

Cranberry orange scones
2 cups flour 2 tbls sugar 1 tbl baking powder 6 tbls butter 1/3 cup cranberries 1/2 cup orange juice 1 beaten egg may also add orange zest and/or 1/2 tsp. Orange extract mix flour, sugar and baking powder, cut in butter until crumbly. Stir in cranberries. Add egg and oj. Mix together, knead on floured board about 12 times. Split in half. Shape each half into a ball. Pat into about a 6 inch circle. Cut each circle into 8 wedges. Place on ungreased cookie sheet and bake at 425 for 9 minutes. If you want, mix confectioner's sugar with oj and drizzle on top of cooled scones. |
