Salmon Marinate
 
At Nancy Lopez Restaurant, they serve this Salmon Mateo dish, that is marinated in Bourbon and Brown sugar. Does anyone know the full recipe for this dish? Every time I eat their, I order this dish. It is so good, and also the veggies served with it. I think after they marinate it, they brush on Teriyaki sauce while they grill it. Just wondering if you have to marinate it for 8 hours?:icon_hungry::icon_hungry::icon_hungry:

I found this recipe. BUT...I would sprinkle the brown sugar on a plate and place the salmon on it and turn it to coat... after it is cooked. Brown sugar has a tendency to burn. The brown sugar immediately turns into a sauce when the hot salmon is placed on it.

When I first read your post,
I said to myself that I wouldn't waste my bourbon for cooking.
However, after seeing the recipe, I can tell that it will be worth it!

Thanks Gracie According to Lopez's, they marinate for 8 hours?

I mix equal (eyeball) portions of mayo and grey poupon stone ground mustard and a few shakes of Worchester sauce ( don't thin it to much) Smooth it on top of salmon and broil 10 or 15 min 5 inches from flame. Got this recipe from South Beach diet book years ago. Low carb
