Favorite lunch "back in the day"
 
PEPPERS & EGGS WAS A POPULAR LUNCH BOX OR LUNCH BAG STAPLE "BACK IN THE DAY" WHEN WIVES PACKED THEIR HUSBAND'S OR KID'S LUNCHES.......FOR WORK OR SCHOOL.

Italian Peppers and Eggs Sandwich


Ingredients: Serves 2

2 tablespoons olive oil
1 garlic clove, finely minced
1/2 teaspoon crushed red pepper flakes
1 cup onion,finely chopped
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced (or just one cup of green peppers will do) (May be cut in long thin slices rather than diced)
4 eggs, beaten
Salt & freshly ground black pepper
1 12-inch loaf of crusty Italian bread, or 2 6-inch rolls

Italian Peppers and Eggs Recipe
Heat olive oil in a skillet over medium heat.
Add the minced garlic and sauté for 1-2 minutes.
Add the onions and peppers and cook for 10-15 minutes until soft.
Add the eggs, salt and pepper to the skillet.
Stir to mix well, then reduce heat to low.
Cook until the eggs are set, stirring occasionally, but do not scramble.
Cut the loaf of bread lengthwise without cutting all the way through.
Place the eggs on the bread, and slice the loaf in half.


Wrap each sandwich is aluminum foil, and allow to sit for 10-12 minutes. This "resting time" permits the flavors to meld. It also allows the hot eggs to soften the crusty bread.

We had a luncheonette near our grade school that sold Hots. Whenever my mom had a Ladies Bridge Luncheon at school we could go there for lunch. It was a hamburger on a bun which was cut in half vertically. A scoop of potatoes was placed between the two halves which were then pushed together to "hug" the potatoes. A brown gravy was poured over the top. It is wonderful. I have made it with fried onions also.

Home Grown from my garden Long Island Tomatoes. Sliced on White Bread with MAYO & Pepper. Loved um.

Mom and dad owned a luncheonette. The peppers and eggs sandwich was popular, with her customer.She also made a neighborhood famous. meatball wedge.

I personally loved her potatoes and eggs sandwich on a wedge. I ate it with ketchup and still do from time to time, although I can't seem to find the same kind of bread in TV.

Ditto. My favorite is also potatoes & eggs.
But yesterday for lunch I made the peppers & eggs.
Next will be eggplant parm. All great sandwiches.

Great idea because actually the best food is "comfort food" or even "peasant food" from one's childhood......very simple fare actually.

So many restaurants today are using the same FROZEN gourmet foods that any one of us can have shipped to our front door via UPS or FEDEX. Chain restaurants are NOT cooking from scratch.

All of these prepared foods are loaded with additives & preservatives. Not natural at all.

It's a rare restaurant that is actually cooking from scratch, using simple fresh ingredients.

The old fashioned "mom & pop" type luncheonette that we all recall is probably long gone by now.........it took long hours, a flare for combining flavors, spices, good ingredients.......& the clientele to enjoy it.

Even making the best meatball for a meatball sub......is elusive.

Most meatball subs purchased "out & about" are horrible nowadays......such as at Subway. Their "veggie delight" with avocado is good.........but their "tuna salad sub" is atrocious.

Most food purchased while dining out just does not have the "old Italian momma's love" in it.

EXCEPTION BEING: Any fresh seafood restaurant that still deep fries their fresh fish. That's a "winner".

I'll post my Italian tuna salad recipe someday. No mayo.

Like you mention.........don't even need the lettuce.

Exactly, the peppers & eggs, potatoes & eggs were all good for Friday lunches (back in the day when people couldn't eat meat on Fridays).
Also, eggplant parm. A little more work......but delicious.

By "back in the day" do you mean when we could eat anything we wanted and it wouldn't cause us health problems, and our metabolism would take care of excess calories? That's easy. Cheeseburger and fries.:mmmm:
