Neapolitan Style Italian Sausage & Peppers
Neapolitan Style Italian Sausage and Potatoes
6 links hot Italian sausage 6 links sweet Italian sausage 6 large red potatoes with skins on, sliced about 1/4 inch thick 1 tablespoon Italian seasoning (or oregano, basil, rosemary) 3 tablespoons fresh parsley, chopped Salt, pepper & about 1 teaspoon garlic powder (or freshly sliced garlic, preferable......as much as you like; it keeps the vampires away) Extra virgin olive oil (about 1/4 cup) 1 cup grated Parmesan or Romano cheese Preparation Slice potatoes and place in a large mixing bowl. Drizzle with extra-virgin olive oil (about 1/4 cup). Sprinkle with Italian seasoning, parsley, salt, pepper, garlic powder and grated cheese. Mix (preferably with hands) to coat potatoes with above ingredients. Preheat oven to about 350 degrees.....or 400, depending on your own oven..... Spray a roasting pan with non-stick cooking spray. Spread potatoes on bottom of roasting pan. Layer sausage links on top of potatoes. Cover tightly with aluminum foil. Bake for about 1-1/2 to 2 hours (depending on your oven). Check after 1-1-2 hours. Remove foil and turn sausages to brown on other side. Brown for about 10 minutes. MAKE GREAT HOT SANDWICHES ON CRUSTY ITALIAN BREAD....... |

Sausage is 80% grease, plus 1/4c olive oil.....heart attack and 10# weight gain.

YOU GOT IT. Actually, best to multiply the recipe & serve when you have a crowd of hungry "young men".......with appetites. Guys love this. When our own kids fly home, usually their friends from all over New England drive over to "catch up"........this is a recipe I just pulled up while I was digitalizing all of my "dog eared recipe cards" from my 50 year old recipe box. Will multiply the ingredients next time we crave more GREASE. Grilling is fine..........salads are fine....healthy food is fine......but even the physically fit runners, cyclists, skiiers, etc. will NEVER turn down TASTY FOOD. Kale chips get pretty old after awhile. I LOVE MY VEGGIES, BUT? MEN LIKE MEAT & POTATOES. All you single gals out there looking for love......? Learn to cook & bake. You'll keep them at home. |
Sounds g-R-e-a-t. Hubby & I just coming off a week of flu-like symptoms...muscle aches, fever, upper respiratory congestion, ear pain, you name it. Able to get out & shop today & making this for Super Bowl at home. Should hit the spot for flavor especially since we didn't even feel like eating much of anything this past week.

Ha ha ha. For you, who are quite capable of making it yourself.....plus the others who also think it sounds good...........here's how to make it stretch even further....... The same recipe can have chicken parts as an extra layer....... Potatoes first layer Chicken over the potatoes (chicken with skin on it so it can crisp up) Sausage over the chicken....... (Can even add large slices of onion plus garlic cloves) But, for smaller amount........the original recipe is perfect. Just the potatoes & sausage. Good luck; you can do it. |
