Any easy to make lowfat healthy meal suggestions would be much appreciated .

The only vice I have left is food -- especially comfort food . :wave:

However both shopping and cooking for one is not any fun .:loco:

I don`t even know how to use a slow cooker . :jester:

Here is a healthy meal you can make over and over and never get tired of it. I serve this with Naan bread. It is like a pita bread (on the rack across from where they make the sandwiches at Publix). Spray the Naan bread with cooking spray and brown lightly in a skillet to warm it up.


Take 3 thin chicken breasts and marinate in Zesty Italian Dressing for 1/2 hour or longer. Put on the grill and grill until done.

Make the following salad and serve along side.


Quick and Easy Greek Salad (serves 4-6)

You'll need:

1 red and yellow pepper cut in small chunks
1 1/2 cups grape tomatoes
1 long English cucumber
1/4 cup diced red onion
1/3 cup feta cheese, crumbled
1/4 cup Kalamata olives (pitted)
salt to taste

Dressing:

2 tablespoons red wine vinegar
2 teaspoons olive oil
1 teaspoons dried italian seasoning
1 teaspoon sugar


To make:

Wash and chop the green pepper and cucumber into bite-sized pieces at add them to a large bowl. Slice the red onion and add that too, along with the grape tomatoes.

Add the red wine vinegar, olive oil, italian seasoning, and sugar to the bowl with the veggies. Toss everything together very well.

Add the crumbled feta cheese, and toss to combine. Sprinkle the Kalamata olives over the top, and you're done!

I suggest you google "easy slow cooker recipes".
I don't like cooking, but crockpots make it easy-peasy.
You can start with chicken breasts, throw in some soup or chicken broth, add some veggies including mushrooms and onions (Publix offers veggies like squash and sweet potato already cut up).
I like basil and garlic so I add those - you will quickly figure out which spices you like.
Cook on low all day, and you have a healthy meal.

You could hire a personal chef. I did but after a couple of years I tired of her cooking. She bought the food and came in twice a week and cooked up lunches and dinners which she refrigerated or froze. It was surprisingly inexpensive. She cooked for another bachelor I know which is how I got her name.

There are even liners for crock pot cooking now that you just use and throw away, thus making it easy clean up too.!!
