I haven't compiled a list yet.
But when I am curious about a village I go to http://www.lylesellsfla.com which shows the MLS listed homes.
I then flip though looking at the legal discription at the bottom or the text till I find one in the village I am looking for and check the year built. Not perfect but works.:shrug:

Are you looking for all villages or some specific locations?

Can give me some insight as to exactly what you are looking for - date first house was sold? Date infrastructure started? Date original plans drafted? Date 40 years ago that the developer sat over in the "Historic District" and decided it would be really cute to buy Florida and establish a lot of villages?

I did a little looking and it can get confusing - many documents never mention the name of a village, just section numbers. But I do think I can give you a pretty good estimate of when houses were first sold in various areas/villages.

Or - if you are looking for a reason to get out and drive around The Villages some gates have an "Established" year posted.

I do know that Orange Blossom Gardens is the oldest. Our home is the sixth home in the Villages.

Historic side guesstimate
 
Not nearly as thorough as KayakerNC, but here's my "guess" for broad range of dates on the "historic side"

Village of Orange Blossom Garden late '50's ('59 since it is 50th anniversary, right?) - 1960's
Village of Silver Lake - 1970's
Village of Country Club Hills - 1980's
