The Highlands is probably one of the nicest places to stay...check out ****, always lots of great cottages and cabins.

Beech Mountain. A local professional owns property there. My wife and I have checked it out online and have booked to stay there in June. His name is Glenn Cochrane (407-782-4837 or 352-347-6473) and he works for the local Russell Stover.
