Looking for leftover turkey recipes
 
We have a fair amount of leftover turkey and I'm looking for some tried and true recipes. Casseroles, stews, chili, soup, salad, stir fry - all ideas appreciated.

Here's my favorite:

Turkey Sandwich

2 slices of Wonder Bread
white turkey meat
mayonnaise
salt
pepper

Place the slices of bread on a cutting board
Spread a thin layer of mayonnaise on each slice
Add turkey meat to one bread slice
Sprinkle salt and pepper on the meat
Lay the the empty slice on top of the meat (mayonnaise side down)
Cut the sandwich in half diagonally
Enjoy

That's what my husband loves, plus he adds sliced pimiento stuffed green olives. Must be Wonder Bread white sandwich bread because of his childhood turkey sandwiches.:icon_wink:



Other people add stuffing and cranberry sauce to their turkey sandwich.

Change the mayo to mustard add a sour pickle and life is good.

My fave is a turkey pot pie. I buy pre-made pie shells (I suck at making my own), make my own white gravy (butter/flour roux with chicken stock or milk) then mix it with cooked onion, celery, mushroom, peas, carrots, herbs/seasonings and leftover turkey cubes. All into shell and add another pre-made shell on top and bake. Major yummy comfort food. There's tons of chicken pot pie recipes on line, just substitute turkey for chicken!

Another fave is a stir fry. Onion, carrot, celery, broccoli, mushroom, ginger, garlic, spices cooked in butter/oil/ chicken stock, add turkey chunks, soy sauce and sesame oil at the end and serve over rice.

Make Turkey Scotch eggs !! Mince the turkey coarseley add seasoning (left over onion stuffing would be good) mix with a beaten egg and wrap around a peeled semi-hard boiled egg. Shallow fry on all sides till golden brown all over.
I usually make these with sausagemeat and eat either hot or cold - hot with new england baked beans and fries - cold with pickles/chutney small fresh tomatoes and lettuce salad. If you don't know what scotch eggs are either google it or make friends with a Brit. YUMMY !!!
