Cole Slaw
 
Does anyone know how to make a good Cole Slaw like "Too-Jays" has???

Not like Toojays which is EXCELLENT.

But a good one I think...

One half head cabbage put though food processer on fine. (Just my likes here)

Three generous globs of Hellman's Mayonaise.

One tablespoon of sugar.

A generous tablespoon of finely chopped onion.

About 1/4 cup of dried cranberries. (Adds a little color, skip this part if you don't have them)

I've always used Marzetti's coleslaw dressing (you'll find it with all the other salad dressings) with shredded cabbage and carrots.

And if you want to skip the shredding ... or making a huge batch .. Publix has bags with various pre shredded veggies (on the back wall of their grocery dept.) to which you can add your choice of dressings, flavors, and colors. And ... if salt is an issue in your diet you can cut the coleslaw's sodium content by using half prepared mayonnaise and half sour cream.

I like to use cider vinegar mixed with a whisk with Lite Hellman's Mayo.

I also use the "Dole" pre shredded cabbage slaw with carrots, etc. whereas my mom and mother in law would chop their own heads of cabbage.

Since it's just the two of us now, I make smaller portions.

I also use the jarred Marzetti's or Marie's cole slaw dressing; less is more. It's found in the refrigerated section over the bagged shredded cabbage and salad stuff.

I prefer Marie's but they do not always have it.
Or one could mix mayo, sour cream and horseradish as a dressing.....
thinned out with pickle juice or vinegar.

What I've been looking for is a simple apple cider vinegar dressing with NO mayo for cole slaw.

Many restaurants in Maine do not add mayo to their cole slaw which is always served as a side dish with their great battered and deep fried fish.

In ending, here is a recipe exactly like the one my mother in law used to make for stuffed celery.......the grandkids love it and this is pretty exact.

Nice while large heads of celery are available at farmer's markets.

The coleslaw at Publix is pretty good too.
