Arroz Doce- Portuguese Rice Pudding
Makes 8-10 servings


4 cups water
1 lemon peel
2 Tbsp Butter (salted or unsalted- I prefer salted)
1/2 Tsp salt
1 cup short grain rice (I like italian style, but not arborio)
2 cups very hot milk
1 1/4 cups sugar
5 egg yolks
Cinnamon for garnish


In a saucepan, bring water, lemon peel, butter and salt to a boil. When it is boiling add the rice and reduce heat to a simmer for about 25 minutes or until almost all the water has been absorbed then add the hot milk. Continue to let simmer for about 5 minutes then add the sugar.


In a separate bowl, beat the egg yolks together and add a few tablespoons of the rice mixture to temper the eggs. Add the egg mixture quickly into the saucepan. Let the rice continue to simmer for about 10 minutes to allow rice to thicken. The rice should not completely absorb the liquid is should form a nice creamy consistency. Remove lemon peel and transfer to one large serving dish or ramekins and garnish with cinnamon.

Basically a crushed tomato, oregano, basil topping??? Place on top of cod fish fillets and broil in oven. Or could be done on top of stove???

Years ago my husband raved over a Portuguese lady's cod fish which sounded exactly like how my Italian dad would make it. Ours had slivered garlic on the top......crushed tomatoes, etc.

I would like to duplicate the Portuguese version.

Here is very good codfish dish

Gomes de Sa Codfish recipe

This is one of the most typical Portuguese codfish recipes and it was created in the Oporto city.
Recipe type: Fish
Serves: 4
Ingredients
2 lbs. salt cod
1 cup olive oil
4 medium-sized sliced onions
1 tsp. garlic, finely-chopped
6 medium-sized potatoes
20 pitted black olives
6 hard-boiled eggs, sliced
2 Tbs. parsley, finely chopped
Instructions
The day before, soak the salt cod in a container of water for 16 – 24 hours, changing the water 3 or 4 times. Then, drain and rinse the cod.
Boil the codfish in a saucepan and simmer for about 20 minutes until the fish flakes easily when tested with a fork. Drain thoroughly the fish and remove any skin or bones with a paring knife. Set aside.
Meanwhile, boil the potatoes in their skins. Then drain, peel and slice the potatoes into ¼-inch slices. Set aside.
In a frying-pan, heat half of the olive oil over medium high heat for two minutes. Add the sliced onion and sautée for about 6 or 7 minutes until they get translucent. Stir in the garlic and remove from the heat.
Lay half the potatoes in the bottom of a casserole. Cover them with half the cod and then half of the onion. Repeat once more the layers and drizzle the rest of the olive oil over the top.
Bake for about 20 minutes in a 400ºF/200ºC oven until the top is lightly browned. Then garnish with olives, the boiled eggs, already sliced and sprinkle with the parsley. Finally, serve the Gomes de Sá codfish.

Where we live in Massachusetts......New Bedford....Fall River area......there are an abundance of Portuguese restaurants that all have various codfish dishes on their menu.

Hopefully this is useful.

Honestly, I have tried many rice pudding recipes but find Kozy Shack in the grocery store good as any I have tried. Great with a little light cream and nutmeg spinkled on top, try it.
