A simple appetizer to serve on the lanai
 
Cranberry Chutney and Peanut Butter Roll-Ups


It’s PBJ for grown-ups! Cream cheese, tangy Cranberry Chutney and peanut butter create a tasty, easy wrap.

Ingredients

  • 1 (3 oz.) package cream cheese softened
  • 1/2 cup Crosse & Blackwell® Cranberry Chutney
  • 8 flour or whole wheat tortillas
  • 1/2 cup Jif® Creamy Peanut Butter

Directions

  1. COMBINE cream cheese and chutney in small bowl until well blended.
  2. SPREAD tortillas with chutney-cream cheese mixture to within 1/2-inch of edge. Top each tortilla with a second tortilla. Spread top tortilla with peanut butter, to within 1/2-inch of edge. Carefully roll up the layered tortillas. Slice each tortilla into 4 to 8 slices. Serve immediately with additional chutney for dipping, if desired.
  3. These can be made ahead. Wrap each securely in plastic wrap and refrigerate several hours or overnight. Unwrap and slice before serving.

Aunt Tammy's Chicken Spread
 
Another simple one, an old standby for me.

One large package of cream cheese softened.
One large can of chicken drained.
One bunch of green onions chopped fine
seven or eight shakes of soy sauce.

Combine with hands. Form into a ball.

Serve with wheat thins.

Sounds good. Here's another one, if your hubby likes to grill........

GRILL SOME GREAT APPETIZERS

1 cup Kraft Zesty Italian Dressing
16 chicken "drummettes" about 2 pounds
1/2 cup BULLS-EYE KANSAS CITY STYLE BARBECUE SAUCE
2 green onions, sliced

Pour dressing over chicken in large bowl; toss to coat.

Refrigerate 30 minutes to marinate
Heat grill to medium heat.
Drain chicken; discard marinade.

GRILL chicken 8 minutes on each side or until done.
Brush with extra barbecue sauce.
Grill 2 more minutes.

Place on platter. Sprinkle with sliced green onions.

16 servings (if your guests can only eat one wing.....impossible).
Multiply to fit the crowd as expected..........or hearty appetites....

Chicken drummettes are chicken wings that have been split with the tips discarded. If you can't find drummettes, use 8 chicken wings, about 2 1/2 pounds. Split wings at joints and discard the tips.

Just make a big mess of these.......more than the 2+ pounds as they will go fast. This is just a basic recipe for a small amount of grilled wings.



Prepare using your own particular favorite flavor of Bulls-Eye barbecue sauce or other brand.........
(they have Memphis Style or Carolina Style plus the Kansas City style as mentioned above).
