Goodlife's comfort soup for rainy days

couple cans of cream of potato soup
2 medium potatoes
ham steak
frozen sweet corn

boil potatoes for 30 minutes, let cool then dice
fry diced potatoes in olive oil, season with garlic, salt and pepper
fry diced ham in olive oil
add soup and milk to pot, heat and add fried potatoes, ham and sweet corn

serve topped with grated cheddar cheese and parsley, garlic texas toast

I could see that without the ham too. Maybe some diced green peppers sautéed with the potatoes.

I love Pastitsio. We used to get it from a Greek Orthodox church when living in Pittsburgh. Those churches have lost a lot of $ lately, as did the Catholic Church with their Friday fish fries.

I can't find spomi on Google, but they came up with psomi. By any chance is that what you meant? Seems like it's Greek bread? Pictures look delicious.

Recipes I have made that I never would have except for being homebound are; (1) One Skillet Beef Shephard's Pie ( no way it would have fit in one skillet! so I used a large casserole dish. It took a long time, but it was good! (2) The Ultimate Potato Soup Recipe Author Sam Merritt (3) Slow Cooker Apricot Chicken-www.dinneratthezoo.com/slow-cooker-apricot-chicken, and (4)Lemon Chicken Orzo Soup. I am shariing with a couple of neighbors so it keeps me motivated. I would recommend any of these recipes.

Lemon Chicken Orzo Soup. Yum. There was a similar recipe in the Silver Palate Cookbook.


I have made Mango Thai Chicken Curry, Rogan Josh (Indian lamb curry), a savory Dutch Baby pancake in a cast iron skillet, topped with burrata and arugula --which was such a big hit it became Sunday Supper--a low-cal black bean & corn salad, Hungarian Goulash, a cabbage casserole in the Instant Pot, grilled flank steak pinwheels (pounded and rolled up with bacon, oregano, parsley, salt & pepper inside), chicken fajitas, pizza, fish tacos, sloppy Joes with homemade cole slaw inside the bun, cookies, cookies, and cookies. I don't eat meat, so some of this was in two forms. Oh, and chicken Marsala. And a mustard vinaigrette chicken & potato sheet pan dinner.


You all are giving me some more great ideas.
