a crock pot would be better as corned beef etc needs a long cook time ...

As a Chef / Owner of a restautant for over 40 years, I may be able to offer some insight. As may go without saying, our aluminum cook pot get some serious abuse. Aluminum stock pots will often "dome" if they are subject to cleaning (water) before cooling. Simply re-shape the bottom blacksmith style. Use a piece of solid wood (2 x 4) inside the pot set on a secure surface (deck?) and strike evenly with a hammer, moving the wood as needed. You'll want to strike the 2 x 4 on the end and move around as needed. You can do it!!

I cook mine all day in a crock pot in a large container of Cranapple Juice. It turns out very tender and good. You can cook the potatoes in the same juice after removing the meat.

No but we do our pot roast on the stove top and I’ve heard about oven cooking it.

Got a new pot and our corned beef is cooking on the stove right now. Looking forward to it.
