Freezing Carmalized Onions

Default Freezing Carmalized Onions

Getting the jump on Christmas Eve and Christmas Day meals, I carmalized a large bunch of onions yesterday and froze them. Supposed to work out just fine and I will report back later as to actual results. Definitely a time saver as that is one of my jobs at Christmas and the kitchen is chaos. I used to do it all but since the children and grands are now all grown ups, I have been demoted to Brussel Sprouts and onions.

I have Brussel Sprouts about an hour before we want to get guests to leave. Works a treat!!

Good to know. I discovered caramelizing onions in a dutch oven in a 400* oven for 45 minutes, stirring every 15 minutes. Made great French onion soup last Christmas. Now I can have the onions on hand in the freezer.

Going to try that, when we go fishing for a week I do a Dutch oven full the first day. But I do it on a burner and have to tend it a lot.
