OVEN BARBECUED PORK CHOPS

Prep Time: 15 mins * Total time to table is 2 hours to allow for slow braising.

************************************************** ************

5 thick cut pork chops (medium thick is o.k.; just do not use the thin chops)

One cup vidalia onion, chopped (or any other onion that you have to equal one cup)

Half cup brown sugar (pourable type brown sugar is easier to use)

Half cup ketchup

6 tablespoons vinegar (apple cider vinegar or white vinegar or red wine vinegar will do)

2 teaspoons Worcestershire sauce if you desire, or not, if you don't care for it.

salt to taste

pepper to taste

************************************************** ****************

Combine everything (except the pork chops) in a small saucepan and bring to a boil. Simmer 5 minutes or so......

Place 5 pork chops in a rectangular baking pan.

Spoon sauce on top and cover. Be sure the sauce is on top of the chops plus all around them.

Bake at 375 for 1 hour 45 min..........or until FORK TENDER.

Every oven is different........but you shouldn't need a knife to cut these.....just plan ahead.

If they have to stay in the oven a bit longer, it's o.k. as the sauce just gets carmelized.

Serve with mashed potatoes or baked potato and veggie of your choice. Corn on the cob is easy.

Corn Bread is also a good side.

Men usually love these chops............kids too. Who doesn't like a fork tender pork chop?

Same "sauce" can be used on spareribs done in the oven. You can also increase the sauce depending on how many "ribs".

p.s. Veal chops can also be done this way.......

Tried your chop recipe. Great

Glad you liked it. It is a favorite of ours. You can even serve it for company. My neighbor keeps bugging me to come for dinner so I can make it for him again. I made it and took it to him a couple of days after his hip surgery. I included a pkg of Bob Evans Mashed potatoes and corn on the cob that I had cooked and buttered rolled up in foil. He was in heaven.

I brine them overnight in 4 cups water, 1/2 cup salt, 1/2 cup sugar. It doesn't exactly make them tender (the days of tender pork with some fat are gone) but it does make them a bit tastier.

add 1/2 cup Apple Juice the acid will break down the tissue

So really you're making barbecued pork chops. Sounds good. I have cooked them that way but I just put a slice of onion and a slice of bell pepper on top
