While traveling in Australia this last winter I saw this on all the breakfast menus. They do like their toast there and the addition of avocado was very popular along with white coffee.

Aussies really know how to eat brekky. Flat whites and brekky sandwiches, avocado toast, eggs, streaky bacon... Yum.
I bought an espresso maker just so our son & dil can make us flat whites when they visit.

I like a sprouted grain toast with cottage cheese on top. Reminds me of quark in Germany.

Avocados are a great source of "good fat" and healthy too. I've not tried them on toast however.

I started making avocado toast about 10 years ago. I put sliced avocado, thin slice of cheese(what ever I have on hand), and a slice of tomato and place it under the broiler.

We go to Johnny Rockets for breakfast because they have gluten free pancakes and french toast for my husband and I always order the BELT (bacon, eggs, letttuce, tomato) sandwich and have them substitute avocado for the bacon making it an AELT.

I had a sliced avocado, roasted green chile and peanut butter sandwich on toasted 12 grain bread for lunch today. Yum!

Unless it comes out of the kitchen after the pancakes then it's a LATE. [i'm not proud of that at all]
