sugar free pumpkin for our diabetic posters:

found this recipe and used sugar free whipped topping and pudding:

Mini Pumpkin Tarts

3 packages pre-baked frozen mini pastry shells [phyllo shells]
Allow the frozen pastry shells to thaw at room temperature for 15 minutes.

1 (15-ounce) can pumpkin
2 cups frozen whipped topping, thawed
1 teaspoon pumpkin pie spice
1 package cheesecake-flavor instant pudding and pie filling


In a medium bowl, combine the pumpkin, whipped topping, and pumpkin pie spice. Whisk until smooth.

Add the pudding mix and whisk until smooth and thick.

Fill each pastry shell with about 1 tablespoon of the filling. Top the tarts with whipped topping and serve.


i find this recipe to be too sweet - but i guess that can work for some. am considering using this as a pudding or as a spread - just don't know what i'd spread it on - maybe graham crackers.
