RECIPES
I hope to get lots of posts on this one. I'm looking for a light sauce to have over broiled Halibut steaks. |

I don't put any sauce on my halibut, simply brush some butter on it, squeeze half a lemon (enough for 2 steaks) and then sprinkle either fresh rosemary or dill over it and broil. To me, tis one of those fish that just needs a little to make it yummy.

I'm with RW, a little goes a long way with halibut.
Try this universal broiling sauce with ANY type of fish. 2 tbsp. melted butter 1 tbsp. worcestershire sauce 1 lemon wedge, squeezed tobasco to taste brush fish with sauce, garnish with fresh parsley, and very lightly sprinkle with paprika add any other spice that you like... I have a wonderful recipe for little necks and shrimp d'aliole. Any takers? |

Red you have it make that just like she said very good But for me I am makeing Navy Bean Soup with left over Ham that will go with your Fish I have been looking for my New York Jr. Chesse Cake recipe when I find it I will post it that is Great Da Sgt ps did you see BIG FOOT? |

I served this dish as an appetizer on Christmas day and it went so fast and everyone raved about it. Actually easy to do also. On the day before, I poached a large salmon fillet, about 3 pounds. Poached it for 12 minutes in a 400 degree oven. Made a stock with onion, carrots and celery, about 2 to 3 cups. Just added some of those to water and brought to a rolling boil for 10 to 15 minutes. Put salmon in 13 X 9 baking dish, added a cup of white wine, fresh dill and tarragon, lemon juice and then just barely cover with the stock. Remove from oven, chill and break into bite size pieces.
Dipping sauce. 1 cup mayo, 1.5 tsp of dry Coleman's mustard, beat for 1 minute, add 2 tsp Lea & Perrins Worcestershire sauce, 1 tsp of A1 sauce, 1/8 cup light cream, 1/8 tsp salt, and 1.5 tbsp of fresh chopped dill.

A very simple way to sauce halibut that you plan to bake is by spreading a generous portion of Hellmans mayonnaise on top and bake until white. If you want it prettier, add some finely chopped chives. Simple and luscious.
