Italian lentil soup

Default Italian lentil soup

ITALIAN LENTIL SOUP


1 small onion, finely minced

2 cloves garlic, minced

1 stalk celery, minced

2 carrots, minced

2 Tablespoons olive oil

2 cups Chicken or Beef Stock (broth)

2 cups water

2 cups cooked (very al dente) ditalini pasta (tiniest "tubes") Ditilini

1 cup dried lentils, rinsed

salt and pepper to taste

Saute the carrots, celery, onion, and garlic in the olive oil until soft.

Do not brown.

Add in the lentils and coat.

Add in the stock and water.

Simmer until the lentils are tender (around 30 minutes or so).

Stir in the cooked ditalini pasta.


Serve hot with grated parmesan cheese on top! Plus, serve with good crusty artisan bread......

With the age of computers, we have an abundant source of recipes available at a click on a mouse --
recipes from reliable and well known sources with reviews
that you can actually count on as being either terrific, so-so or lousy.

Before I try any new recipe, I go to a few sources to compare them.
After reading the ingredients and reviews, I then decide which one to prepare.

I consider myself a "seasoned" cook [no pun intended] and can usually tell
if a recipe is a good one, but with the Internet available as a source,
I can usually find an even better recipe than the one I think is good.

So does this comment of yours mean that this sounds like a good recipe?

From reading this recipe, I think it looks really good. Senior Citizen posts many fabulous recipes. I'm trying this one over the weekend.
