Pork Pie
My mother-in-law always served Pork Pie on New Years Day. It was ground pork with creamed corn topped with mashed potatoes in a pie crust. It is very good tasting.

For those who have wondered: Pork is considered 'good luck' because a pig roots in the ground and moves forward. Chicken is NOT recommended because they scratch the earth and move backwards, also (although I haven't seen many do this), chickens and foul fly and you don't want your 'good luck' to fly away.
Just a bit of 'useless' information that clutters my mind...... Happy New Year, everyone! BTW, we had New Year's Day dinner prepared by my sister-in-law, born and bred in the South. Pork tenderloin with a blueberry salsa, collard greens, mashed rutabagas, black eyed peas (topped with raw onion and a spoonful of chow-chow relish ~ delish!) and a cast iron skillet of cornbread. PHEW! What a feast! |
