Default Baked stuffed zucchini recipe

****BAKED STUFFED ZUCCHINI RECIPE:
May also be microwaved.......

4 small zucchini

1/2 pound pork sausage

2 garlic cloves

1/2 cup day old bread (any type)...
I've also used artisan which has more texture...

1/4 cup low sodium chicken broth...or white wine.

Cut a small sliver from the bottom of each zucchini so it will lie flat without rolling over.

Cut a larger sliver from the top to expose the insides of the zucchini.

Use a spoon to carefully hollow out the zucchini, being careful not to break all the way through the skin.

Coarsely chop the zucchini insides.

Mince the garlic.

In a nonstick skilled, brown the sausage.
Drain well.

Mix the chopped zucchini, sausage, and garlic.

Stir in the diced bread and moisten with the chicken broth or white wine....

Divide the stuffing mixture among the 4 hollowed out zucchini shells.

Place them in a shallow microwave safe baking dish. Add 2 tablespoons water and cover with plastic wrap.

Microwave 4 to 5 minutes, until zucchini is tender. Let stand 3 minutes prior to serving.

****I prefer to bake this in a 350 degree oven, topped with mozzarella cheese......until cheese is melted and stuffing is warmed through.......

Nice side dish to something from grill........
Equally good "on it's own" with green salad....
