I love eggplant parm and often choose it when dining out. Someone told me that if I ever get the chance to try eggplant rollatini, it's delish. So that's what I having for dinner tonight. Gonna order online, run over on the golf cart with my sweet hubby, and bring it home.

I'm definitely more of a "baker" than I am a "cook" but I do a few entrees pretty well.

Today my daughter and I made super easy veggie soup in the insta pot. We're gluten free so instead of crusty bread for a side we'll toast up some gf bagels.

lg potato
2 med carrots
peas
corn
1/2 c chopped onion
can of petite cut tomatoes
carton of veg broth
LOTS of garlic
1 TB olive oil
1 tsp Italian seasoning

5 minutes in insta pot

after it's done we'll add fresh baby spinach and steamed zuke,
top with shred parm, minced fresh basil
salt to taste

Had chicken shyt (AKA chicken casserole) with my added home grown Cajun belles, pimento, and big Jim’s peppers. Little warm depending on peppers, around 500 to 5000 plus on SHC.

I grown about 5 to 7 different kinds of peppers from seed starts in pots. I also make peppers crushed pepper flakes.

Absolutely! Hot pepper is used for many health issues.

I can’t take too much hot spice does it still work if you drown it with yogurt?

Not an expert but I would think that it would still be beneficial. Indian curries are sometimes served with raita which is yogurt and spices.
