Our very favorite is the fresh salmon from either Aldis or Walmart. Packaged fresh and a very nice thick cut - typically about $8 lb. Normally get a lb or slightly larger pkg. Slice the piece in 1/2 then 1/2 again - the extra 2 pieces in a baggie and into fridge for tomorrow's dinner.
- pat the 2 salmon pieces dry, leave skin on.
- heat up nonstick skillet to med hi.
- when at heat drizzle a bit of olive oil in pan and allow to heat.
- put dried salmon pieces skin side down little bit of salt and sprinkle dried basil leaves on top.
- about 2-3 minutes, flip over and remove skin - a bit crispy. Put skin onto pan to crisp up.
- another 2-3 min and flip to cook salmon a bit more on the side with removed skin.
- drizzle a small bit of maple syrup in the middle of the 2 pieces while cooking and flip again
- remove after 1/2-1min depending on doneness pref (she rare, me med).
- remove salmon and let rest while putting a tbsp of water in the pan to deglaze and drizzle over salmon, serve.
As a nice easy side, clean and chop sweet potatoes into 2" cubes. Put into slight boiling water till tender (10 min), Leave in stainless steel pan and blend together with hand mixer - option, bit of butter and brown sugar. Oh--- leave the skins on when cutting up - easier and adds nutrition. Like mashed potatoes but yum.
We have the salmon at least twice a week. About $2 a serving and prepped just as you like - and no sending back to the restaurant kitchen for overcooking etc... And so yummy.
