Any chance the Building you pointed out in the video as a sales center is a Rec center?

There'ssome very tall walls going up so It's looking more like it may be the Rec center mentioned with the indoor indoor gym (backetball, pickleball, vollyball, etc)

Nope, the Olympia Regional Rec Center is being built on the north side of building 12 (sales center), they cut in the footers for the foundations, and they started erecting rebar. In the video you can see it when flying over the ball fields and behind building 12 when I go for the high shot just before the clip ends.

Any clues what the Plaze building in Middleton could be?

The parking lot is different from the others, maybe layed out for shopping carts?

Nope, not the Olympia Rec Center it is building 12, the highest probability is that it is the new sales center - always are large building/facilities to support the large number of sales reps, support offices, and closing rooms, look at the LSL, SS, & BW facilities.
ORC is under construction just north of b12, you’ll see it in video 136 that should be out in the next day or so. The athletics building requires a different type of construction to make the high ceilings necessary, again, this can be seen in 136.

GREAT CATCH! Those are shopping cart spots, I’m not a betting man but I will put money on a grocery store. It’s too small an area for a big box store and the location certainly drives the need for a grocery store. Based on the current market for grocery stores in Florida and the existing business relationships, I’m going to say Publix will be building here.

Fenney was being bashed for years, it's now 7 years old and we still get bashed every once in awhile. For a long time it was also Sawgrass and now it's a model for what is going in at Spanish Springs. The developers know what they're doing and all the bashing in the world won't slow them down. I really like seeing the growth and these videos, just don't like the traffic.

Part of the fun living near the construction is watching how they do things :)

Maybe for concrete curbing the walking path?

I agree, definitely the size of the Walmart Neighborhood Market and not a Publix or other large chain store.
