Exaggeration, imagination, hallucination - if it looks like a crack, feels like a crack, you gotta crack. Defending it cracks me up.

What should have been used on the ceiling? What do other builders use on the lanai ceilings in Florida?

As I said in my original post, I have seen a new CYV with what appears to be either a composite or vinyl ceiling in place of the sheetrock. That, at least to me indicates they know there is a problem. They are white in color, if composite, they could be painted. If vinyl, you could opt for a different color.
I’m not a DIY person, we’ll se what happens.

When we had Creative Finish Carpentry do our crown moulding a few years ago, they had just begun to install a composite material (including crown) on lanais. It wasn't in our budget at the time, but it definitely adds a finished look to the lanai, and it would end the worries of drywall seam cracks.

They no longer do the ceiling, I was told to call back late spring. In addition, it’s very expensive.

Interesting. Our estimate was $1,600. I spoke with them onsite at another project a few months ago, and they were still doing them. I'm wondering if the issue is getting the material.

That’s what I was told, a issue with getting the material. I was given a rough price of $3,000.

Yikes. That is expensive!
