great idea
I love perfectly cooked scrambled eggs and perfect scrambled eggs with cheese but always came up short until now. I whisk a large egg and add the cheese in a bowl. I microwave it for 30 seconds. It's not completely done but continues to cook as I toss it around in the bowl to make the cheesy curds.

This is after I heat tortillas in the fry pan on both sides and then fry ham, onions and jalapeno peppers in the same pan.

Forget the omelette, just spread the fixings on top of the cheesy eggs and roll it up in two little flour tortillas.
