Eggs in a skillet
 
I actually prefer my eggs scrambled into a skillet of hash browns, with peppers, onions And diced bacon. After cooking the hash browns, I just crack a couple of eggs into the skillet and mix them in until cooked to perfection.

Currently, I like to hard boil a dozen eggs and have a few every day chopped up with mayo and chopped onion. I remove all the shells and have them in the refrigerator ready to eat. My husband also likes to have one or two of the hard boiled eggs when he is peckish.

My favorite preparation is a fried egg and cheese sandwich on seeded wheat. Glenview CC has a version on its brunch menu with green tomato and bacon. I'm also never averse to an egg and sausage McMuffin.

I also like egg salad sandwiches but have gotten so lazy I just buy peeled hard boiled eggs.

Wow, did that being back memories . My grandfather used to crack an egg in a glass and drink it. Don’t remember wine, but he did make his own and drink that! He lived well into his 90’s. Maybe the knew something we don’t.

I usually make omelet every other day with leftover veggies from previous dinners. Much healthier than fried potatoes/onions or breakfast meat.

I will second the omelettes first, then scrambled second. My favorite omelette is a Spartan omelette served at a suburban Chicago restaurant -- with gyros meat, feta cheese, tomatoes and spinach. Second favorite omelette has chorizo, salsa and cheddar cheese. I also like broccoli and mushrooms in my omelettes.

Regarding scrambled eggs - must be served with cheddar cheese and salsa.

Wow! They sure hate eggs!!
Some years ago I was examined for prostrate problems, but thankfully got the all clear.
My Consultant told me not to worry, as most old men died with prostrate problems, but very few from it.
He was a very nice man, and I would have loved to have seen him, but he was behind me all the time!!
