Drive over to Homasassa Springs State Park and see some manatees up close. The native hippopotamus is a lot of fun to see, too. The story about how the hippopotamus became a native Floridian is a good one.
While over there, eat lunch at The River House in Crystal River and get a table overlooking Monkey Island.
Another day, drive up to Rainbow Springs State Park. The 72 degree water is mighty refreshing to swim in on a hot day. Take a swim noodle or life jacket as the water is deep.
Another day, drive over to St. Pete Beach for the day. Great beaches, gentle slope in the water, and only takes 2 hours to get there.
