Generally, the best access was through subterranean passages in the basements and sub-basements of downtown restaurants.
The rats were plentiful and not particularly shy. They were also quite large. Extermination efforts were ineffective back then, and apparently that has not changed. A browser search about Chicago rats indicates an epidemic of rats persists.
