Frosty Margarita Pie - No Bake!
Frosty Margarita Pie
Crust:
1/2 cup finely chopped strawberries
1/2 cup sugar
3/4 cup graham cracker crumbs
Filling:
1/2 gallon vanilla ice cream (can be sugar free, fat free, or frozen yogurt) softened
1 Tablespoon grated lime peel
1/3 cup fresh lime juice (about 2 limes)
2 to 4 Tablespoons tequila, if desired.
Topping:
Whipped cream
Lime and strawberry slices.
In small bowl combine all crust ingredients, mix well. Press in bottom of pie pan (spray lightly with Pam before) or 9 inch baking pan. Place in freezer.
In large bowl with electric mixer, combine all filling ingredients. Mix until just combined. Spoon into crust. Freeze overnight. Cover with foil after frozen. This will not have to be taken out of the freezer before cutting. The tequila prevents it from freezing hard. Serve topped with whipped cream and garnished with thin lime and strawberry slice .
