I gave up trying to find a satisfying low carb ice cream. I have an electric ice cream maker that someone gave me that I use all year round. I have found some decent recipes and tweaked a few to use multiple sweeteners like one third sugar, one third malitol or other sugar alcohol that usually doesn't spike blood sugar, one third stevia-based sweetener or splenda. I find using more than one sweetener allows you balance out the negatives of each. You can use pasteurized eggs so you don't have to cook it but if I have the time, I prefer the "heated" recipes and add the sugar in the beginning and the other sweeteners after I turn the heat off.

It's fun making your own, with the newest model makers, it is fast (20 minutes) and easy and can make virtually any flavor you want. My personal favorite is rum raisin which often take longer because of the alcohol. Some times it doesn't harden enough until it sits in the freezer a while.
