I just discovered how wonderful outdoor cooking can be in all its variety. For years, all I knew was single zone cooking on a Weber Genesis or sears equivalent in natural gas.
Recently, however, all the mundane cooking has given rise to an enjoyable new hobby. It all started when my next door neighbor upgraded his Traeger and I ended up with his old one. My initial reaction was this is terrific. Sure wish I knew about pellet grills years ago. What great flavors! Learned to smoke low and slow. Beef ribs, pork ribs, brisket, and more. Learned to roast and finish with a sear on the Genesis.
Next up on the learning curve was another neighbor who gave me his old Weber kettle. I upgraded with a few new parts and discovered the wonderful world of charcoal. Brought back memories from my childhood and I absolutely loved it. Learned to smoke on the kettle and was able to replicate and expand upon what was available on the pellet cooker due to the higher temperatures.
Next up was a small ceramic egg just because I wanted to experience that dimension of outdoor cooking. Much smaller cooking area but deliciously moist food resulted. Used for smoking, grilling, and reverse sears.
My latest acquisition was just a few days ago. It was a stainless griddle insert for the Genesis. This opens up still another dimension and is tons of fun. My favorite thus far on the griddle is breakfast cooking. I can just see my pants begin to get tighter.
I enjoy all my toys and feel so fortunate that my next door neighbor started me on the journey with the Traeger. I don’t have a specific recommendation for your individual situation but feel it is all good. You cannot go wrong with any decision as long as you are outside cooking.
